This month, we head to the lush highlands of Copán in western Honduras, where smallholder farmers cultivate high-grown coffees at elevations ranging from 1,200 to 1,600 meters. Santa Rosa is a classic washed Central American coffee - refined, vibrant, and rooted in tradition. It’s the kind of cup that feels familiar yet nuanced, with enough brightness to wake you up and enough body to keep you coming back.

Santa Rosa de Copán is a region long known for its ideal coffee-growing conditions: rich volcanic soil, misty mountain air, and a climate that encourages slow cherry development. This lot is sourced from producers working with COCAFCAL (Cooperativa Cafetalera Capucas Limitada), a cooperative known for supporting sustainable farming and traceable quality. Together, they produce coffees that reflect both place and precision.

This is a washed coffee that’s patio-dried under the sun - a tried-and-true method that emphasizes clean, structured flavors. The process involves carefully fermenting and washing the beans to remove the mucilage, then drying them slowly to preserve clarity and brightness. The result: a cup that’s honest and expressive of its origin.

Brewed up, Santa Rosa HG opens with zesty orange citrus on the nose, followed by milk chocolate mid-palate and a toasted almond finish that lingers with warmth. It’s smooth, clean, and effortlessly drinkable - equally suited to a relaxed pour-over or a brisk morning French press.
