This month, we’re heading to the highlands of Cajamarca, Peru, where smallholder farmers are producing some truly elegant coffees. The Peru Collectivo is a standout example - grown at elevations between 1,600 and 1,800 meters and crafted from a blend of Caturra, Bourbon, and Pache varieties.
This isn’t a flashy coffee. It’s refined. Clean. Crisp. The kind of cup that invites you to slow down and pay attention to the details.
The Origin: Nestled in Peru’s northern Andes, Cajamarca offers ideal conditions for high-elevation coffee - cool nights, fertile soils, and a long growing season. The Peru Collectivo reflects the collaborative spirit of the region, combining lots from local farmers into a balanced and consistent offering that still allows the terroir to shine through.
Processing: This lot is washed and patio sun-dried, a traditional and meticulous approach that strips away distraction and enhances clarity in the cup. It’s the processing method of choice when farmers want to let the origin and varietals speak for themselves - and this one absolutely does.
Tasting Notes: Brewed up, you’ll notice an aroma of black tea, a note that carries through from the first sip. As it cools, the cup opens up to a soft honeydew sweetness with a nutty finish that’s comforting without being heavy. It’s a coffee with clarity and depth, perfect for filter brewing or a light espresso.
